On my last few vehicles I always ran a colder T-Stat and eventually colder plugs.

With this new truck Im not so sure... I was thinking a 180 at least after a intake is installed... Anything else I need to watch out for? Does anyone know if I'll throw a code with just a 180?

To my knowledge most vehicle throw codes with a 160 but not a 180..?
