My next question would be this then....what is the correct off-set and back-spacing to get the rims to tuck underneath the truck, allowing the truck fenders to lay over the rims when the bags are dumped?

Narrowing the rear is not needed ALL the time. There are several people on this and other Dakota boards that did not have to get the rear narrowed.
There are several different suggestions on what the off-set/back-spacng needs to be. I mostly hear 6.75", but I need to be sure.
