Its a little early for a cat to go bad unless you been having misfire issues for awhile.
If you do replace an 02 sensor I suggest the front one since it does the fuel mixture and be sure to use a Denso brand. The back 02 sensor is for monitoring the cat.
Do you have access to a scanner that does live data?
EGR valve?? My 2002 does not have one.
I know these older 4.7L like the stock Champion copper plug. They are only good for around 30,000 miles.
Not sure if the 07 came with platinum or copper, but I would check.
BTW-I run 87 octane with up to 10% ethanol and have no problems
